The Big Shift
In just one century, the biggest change in our diet wasn’t sugar — it was seed oils.
For example: soybean oil went from almost nothing to over 7% of daily calories in the U.S. — a 1,000-fold increase.

What Are Seed Oils?
Industrial oils made by crushing and refining seeds like soy, corn, sunflower, or cotton.

Main issues:
High in linoleic acid (LA, omega-6).
Very unstable when exposed to heat, light, and oxygen → oxidize easily.
In excess, promote inflammation and hide in nearly all processed foods.

Why Care About Linoleic Acid?
Not all fats are created equal:
Stable fats → butter, ghee, tallow, olive oil (resist heat).
Unstable fats → soybean, corn, safflower (oxidize and create toxic byproducts).

Oils to Avoid — Dr. Cate Shanahan’s “Hateful Eight”
Identified as the worst offenders due to high LA and instability:
Corn
Canola
Cottonseed
Soy
Sunflower
Safflower
Grapeseed
Rice Bran

Better Options
Lower in LA and more stable:
Animal fats: tallow, ghee, butter, lamb fat
Tropical oils: coconut, palm, cocoa
Extra virgin olive oil
Avocado oil
